Description
A balanced organic olive oil produced exclusively from dried olive trees of Koroneiki variety in Ancient Olympia. Trees remain untouched by human intervention and grow with respect to the purity of nature.
The olives are harvested in mid-October by hand, when they are green and unripe and are handled at low temperatures (<23oC) within 10 hours of harvest, in accordance with internationally certified organic farming protocols.
Certified organic extra virgin olive oil is characterised by its purity, richness in nutrients, its low acidity and its full and distinctive taste. The nose is dominated by aromas of freshly cut grass and artichoke. Fruity, bitter and spicy coexist in perfect balance, highlighting all the positive characteristics of quality Koroneiki variety olive oils.
The mouth is dominated by flavours of tomato leaf, green pepper, almond and banana aromas creating an aromatic profile with excellent balance and complexity.
After the production, it is stored exclusively in cooled stainless-steel tanks, using nitrogen for optimal preservation of their quality characteristics. It is bottled by hand, with the addition of nitrogen.
A balanced and pure organic olive oil, ideal dressing for fresh salads, vegetables raw fish and spicy dishes.
