Description
The award-winning polyphenolic EVOO (extra virgin olive oil) is a single-variety organic olive oil made from Kalamon olives grown on our estate in Voutianoi, Laconia.
The harvest begins and concludes in October, a time when the olives are still unripe and green, boasting the highest concentration of polyphenols and antioxidants. These early olives produce an intensely fruity and spicy flavor profile.
Within 24 hours of harvesting, the olives undergo cold pressing at temperatures below 27°C to ensure the olive juice retains its organoleptic properties.
The olive oil is initially stored in stainless steel tanks to allow natural sedimentation. Finally, it is bottled by our partners in specially designed glass bottles, adhering to ISO 22000 (HACCP) standards.
Health Claim:
The EVOO olive oil EVOLIA belongs to the category of olive oils that protect against the oxidation of blood lipids, as per EU Regulation 432/2012.
The bioactive compounds oleocanthal and oleacein are known for their significant biological properties, including anti-inflammatory, antioxidant, cardioprotective, and neuroprotective effects. These properties are certified by the Department of Pharmacognosy and Chemistry of Natural Products at the School of Pharmacy, University of Athens.
Daily consumption of 20g from the analyzed sample provides more than 5mg of tyrosol and hydroxytyrosol derivatives.
